Lacey Coffin, originally from Port aux Basques, NL, is now the Executive Chef at VU restaurant in St. John's, NL. She earned her Red Seal in 2020 and has cooked for celebrities, including the cast of Peter Pan. Lacey recently won 1st place in the fish cake competition, two years now in a row at the Songs, Stages and Seafood Festival in Bay Roberts. Lacey also won silver in "Canada's Great Kitchen Party”, in her first year competing in 2024. In 2025 she won the gold medal at the kitchen party and went to Ottawa to represent Newfoundland earlier this year.

Besides her love for creating delicious meals, Lacey enjoys exploring the outdoors and spending time with her animals. She holds her family and hometown of Port aux Basques close to her heart and visits them whenever possible. Lacey looks forward to competing and hopes to expand her culinary skills and learn from her peers.
